What: We are proud to announce CrossFit Santa Cruz's next nutrition event is with Chef David Stockhausen on a local, regenerative, grass-fed cattle ranch.

Join us on Dec. 15 to learn about the importance of grass-fed meat, farm-to-table ingredients, as well as knife skills and food safety. We will take a short tour of a cattle ranch, then prepare and cook an exquisite meal with Chef Stockhausen of Yam & Bean.

Cost: $45

Ingredients:
13 eggs
2 cups zucchini, chopped
1/2 onion, chopped
1 cup steel cut oats
2 cups water
Paprika, salt to taste

Directions:
Pre-heat oven to 400 degrees.
Saute veggies.
Boil 2 cups water, add oats, cook on low for ~15 minutes, stirring occasionally.

Combine veggies and oats in medium mixing bowl. Add whites of 1 egg, salt, and paprika.

Divide mixture evenly in muffin tin and flatten (you can use a spoon or measuring cup). Bake for ~20 minutes or until the “crust” looks browned and crispy.

Remove tin and crack 1 egg carefully onto each crust. Bake for another ~15 minutes.
