Rest days are a vital part of your fitness.  There are two basic ways to look at your rest days.  First, take a day off and do nothing.  Let your body recover and repair itself and allow your mind to unload from the stressors of training.  Secondly you can you a rest day to be active.  Go for a hike, swim or bike ride for fun.  Take it easy and enjoy your day out of the gym.
